in Scotland the distiller in not seffered by the Excill ands & the sf. gr. of this wash is generally about 1.06. But in England the distiller is obliged to produce 23 gallons of spirits of the Sf. gr. 0.916 from every 100 gallons wash. the therefore makes the wash as strong as possible. I have seen it as high as 1.09 & 1.1. In much cases the produce from the same ? of grain is always less because a considerable portion of the matte dissolved in the water is prevented from fermentiry by alcohol evolved. the quality of the spirit is also much inferior.

3 The weather the wash is the greales is the quantity of spirit obtained from the grain because the fermentation is more complete. In some trial which I made I pound 1.05 or 1.04 the most advantageous for the specific gravity of the wash. The distillers generally make it heavier.

You will find in the article Brewiry & Distillation in the supplement to the Encyclopaedia Britannica just conclued an abstract of all that I ? on the subject of fermentation & Distillation. if you have not seen thus book, it would be worth your while to get it. for it contains a great mass of valuable matter, which you would pnd of revue to you
